These egg rolls are amazing.. I’m not even egg-aggerating

Hey everyone! Today I am going to write about my mom’s famous egg rolls! For any of you that watched our podcast I will be going over the same dish! I know some of you may have wanted to try making them so writing about it might be easier than just listening to me talk about it!

mothers-famous-chinese-egg-rolls-recipe-smallThis picture is what your final product should look like! How amazing do these egg rolls look!? I will talk about the basics of how to make them so you can taste for yourself and tell me how good they are.

For starters, you need to go to the market and buy egg roll sheets. They mostly all resemble this:

how-to-make-filipino-egg-rolls-step3You can buy these from any local Asian market and I believe they are also sold at local grocery stores but maybe not this exact brand.

Next, You want to buy any of the ingredients you want to add to your stir-fry portion. My mom usually adds chicken, green string beans, carrots, onions, salt and some spices for flavor. You can make this a vegetarian egg roll or one filled with meat. I recommend filling it with chicken because it tastes really good.  If you choose to fill it with any type of meat, make sure you cook the meat prior to making the stir-fry. You want everything including the vegetables to be cooked prior to adding it onto the pan for the stir-fry.  Once you stir-fry everything let it cool down a little before prepping the egg roll sheets.

After everything is cooked, you are now ready to use the egg roll sheets.

*An important thing to remember is to let the egg roll sheets thaw out and defrost on their own before working with them for the meal. So I would recommend thawing it out a few hours before you are ready to cook the egg rolls. 

Once the egg roll sheets are thawed you are ready to prepare the rest of the meal! My mom begins by adding some of the stir-fry onto one corner of the egg roll sheet. Then tightly wrap and roll the sheet to the other corner, making sure the stir-fry is tight and inside the egg roll sheet. Tuck in any corners or edges that appear to be loose. After that repeat the same process for as many egg rolls as you wish to make.. I would say you will probably eat at least 6-7 on your own so plan accordingly.

After all of the egg rolls are made you are ready to cook them. Prep a deep dish pan with oil and have it heated and ready to go when you are about to cook. You can cook more than one egg roll at a time and I would recommend doing a couple at a time to save time. Let them fry and turn them over when golden brown. You want both sides to be golden brown! After that just lay them in a paper towel and VOILA!! Your egg rolls are officially cooked and ready to be eaten.

The shells aren’t the only things that are going to be stuffed!

download (1)Are you craving something cheesy today.. aside from  my jokes!? Well then today is your lucky day! As I was writing this post I was craving a lot of cheese and decided whats better than writing about stuffed shells! Stuffed shells are an amazing dish to make for dinner with the family or family parties or even when friends are coming over! The great thing about stuffed shells is it can be vegetarian OR non-vegetarian! I prefer to eat this dish as a vegetarian based dish.

Here is a pointer: This dish is the perfect thing to make for your date or boyfriend/girlfriend especially for anniversaries or date night but only if they love cheese and aren’t lactose intolerant! 

Today I want to talk about spinach and ricotta stuffed shells. I really want some right now even though it’s almost 10 pm! This is a dish that anyone can make, I can promise you that. My boyfriend can barely cook but made this dish for our anniversary and it was probably the most amazing thing I ate.. so believe me when I say anyone can make it( Sorry Neil if you’re reading this love you!) To make this meal a little more healthier just load up on some extra spinach when stuffing the shells!


  • large pasta shells which you can purchase at any local grocery store
  • ricotta cheese
  • mozzarella cheese
  • Parmesan cheese
  • marinara sauce
  • eggs
  • oil
  • spinach
  • any toppings or spices you would like to add

As you can see, this dish requires a lot of cheese!


First step would be to preheat the oven to 375 degrees! Then begin cooking the pasta shells but remember to boil the water first. After the pasta shells are ready put them aside for later. Begin cooking the spinach and add garlic and whatever else you would like to fill the shells with. Next, pour all cheese and eggs and spinach into another bowl and mix it all together. At this point you want to add anything extra such as spices that you want in your spinach ricotta mixture.  Then pour half of the marinara sauce into the bottom of the pan or dish you are going to be baking the shells in. Begin to stuff the shells with the mixture you created. Place the shells in the pan and pour the rest of the marinara sauce on top of the shells.  Feel free to sprinkle any cheese on top of the shells before baking. Then wrap the baking dish with foil and bake for about 20-25 minutes. Take the foil off and bake for another 10 minutes or until golden brown. Take the baking dish out when its ready and sprinkle more Parmesan cheese on top before it cools down so it melts on top of the shells.

Now is the fun part. Eating the shells! You just wait until it cools down and the shells are ready to be served right away. Leftovers can be refrigerated but it doesn’t taste as good as the day of.

Crepe Attack!

Hello everyone! I hope you all had a great week! This week I am going to do a dish that is super popular in France and I had it A LOT when I traveled to Paris a few years ago. If you didn’t guess already, well it’s their Crepes!download

I don’t even know where to begin to talk about how amazing crepes are and how simple they are to make. The thing with crepes is you can fill it with whatever you want inside. You can make it a breakfast crepe, a lunch crepe, or even a dessert crepe! The dessert crepes are my favorite. That picture above makes me crave one right now!

Crepes are super easy to make and take very little preparation time! For those of you that don’t know what they are, well they resemble pancakes! You can even use pancake batter as the mix if you are really running low on time.

Ingredients You Will Need

  • All purpose flour (1 c)
  • salt (1/4 tsp)
  • sugar (1 tsp)
  • eggs (3)
  • milk (2 c)
  • butter (2 tbsp)

These are very simple everyday ingredients you should already have at home!

Instructions to Cook

All you really need to do now is mix all the ingredients together. Mix the wet or liquid ones together and the dry ones separately and then combine! Then just oil up a pan and pour the batter in! You want the batter to be very thin when you pour it in the pan and not thick like pancakes. Make sure both sides of the Crepe are golden brown and then you are officially done making your crepe. Make as many as you need to satisfy your hunger!

Different Ways to Eat

So as I stated earlier, with Crepes you can stuff it with anything you would like depending on if you want a breakfast crepe or dessert crepe. I personally always go for the dessert crepe. In Paris, I would always order Nutella and strawberries with whipped cream. It was heaven in my mouth. Every single one of my taste buds were satisfied that day. When I say you can put anything in a crepe I mean it. In the past I have put strawberries, bananans, nutella, whipped cream, blueberries, and raspberries into one crepe. A healthier version would be to eliminate the whipped cream and maybe use low fat cream cheese spread instead of the Nutella.. but I wouldn’t because Nutella is amazing.

Another way is to eat crepes as a breakfast food. I have stuffed crepes with eggs, cheese, bacon, sausage, onions,  and peppers into a breakfast crepe and it was the most satisfying breakfast I think I ever had. You can easily make vegetarian crepes as well by just adding vegetables and eggs. There is an endless amount of options of things you could do with Crepes. I recommend anyone that hasn’t had the wonderful pleasure of tasting crepes to go now and make some yourself!

After these, you will be asking for “momo”

Hey everyone! So this week I did things a little differently. I posted a question on my facebook status asking everyone what dishes I should write about in my blog.Using the method of crowdsourcing, people responded to my post with their different comments. I got a variety of answers from samosas, chicken curry and rice, pani puri, to momos(Tibetan), soup dumplings, rocky mountain oysters, fish and chips, lo mein, meatball parm, and tacos. As you can see it’s a variety of foods from all over the world! This was my first time reaching out to the public for feedback and it was a success! Thanks to everyone who gave me feedback!!

So I have been doing a lot of Indian dishes lately so today I am going to change it up.  I have never had Tibetan momos before so I decided to write about that dish and research about the Tibetan culture. 


I did a little bit of research on the Tibetan culture to find out more about the types of foods in Tibet. Tibet is known for its noodles, dumplings, cheeses, and goat. It is a culture influenced by China, India, and Nepal. After reading about the Tibetan culture I researched about momos and what exactly they are. Momos are also known as dumplings. What I found to be nice is the variety of ways to make momos. Momos can be vegetarian, filled with different types of meat, steamed, fried, and also cooked in different types of soups! I love foods that have a variety of ways to cook them. The healthiest way to cook momos would definitely be having to steam them!

Depending on the mood you are in, you can buy ingredients to fill your momos with anything you would like. I personally would love to try filling it with chicken, spinach, and cheese along with some vegetables! Just talking about it makes my stomach growl! Whichever ingredients you choose, make sure to chop them into tiny pieces in order for it all to fit into the shell.

I heard the most difficult task is shaping the dough in the form of a momo (dumpling). It almost looks like the shape of a half crescent moon! I can imagine how difficult it is to fill the dough and get a perfectly crescent shaped moon!

The dough is very simple to make. It’s the same way we made the dough for one of my earlier posts for making Puri. Its not time consuming at all! The filling really depends on what you want to add and if you want to make it a vegetarian or non-vegetarian dish! After you get your mix prepared you are ready to fill your dumplings! A very useful site that shows a good recipe to make momos can be found here. Check out that link and try to make some on your own! The site gives directions on how to create the different shapes of momos which I found to be very useful !I know when I go home I am definitely going to try making these!
