Hey everyone! So last week was supposed to be my last blog post but apparently we needed to do one more.. so this is going to be the last one.. for real this time! I hope you have all enjoyed these past couple of weeks as much as I have! I love blogging now and hope one day I can start my own blog and keep up with it! So I want to keep this last post simple. I am going to tell you how I like to make mango- pineapple smoothies. it is super easy and very quick to make! I would definitely say that mangoes and pineapples are my favorite fruits ever!
Ingredients/ Materials needed
- yogurt ( I use Greek yogurt)
- a tsp. of sugar
- a blender
First you need to cut the pineapple up into chunks and remove the outside part so it’s just strictly pineapple pieces. Next you need to remove all the skin from the mango and cut it up into small pieces just like you did for the pineapple. Now just get as much yogurt as you think you are going to need for yourself and spoon it into the blender. I personally like to add a small tsp. of sugar into the mix as well. Now just throw your fruits inside the blender and hit start! I like to puree it and hit all the different levels on the blender to make sure it is smooth and creamy. I hate having thick fruit pieces in my smoothies so I always make sure to blend it a lot. Now turn the blender off and VOILA you have yourself a delicious pineapple-mango smoothie! I told you it was simple!
The wonderful thing about fruit smoothies is you can add as many fruits as you want into the mix and it all somehow still tastes amazing. I have added pineapple, mango, banana, and oranges into the mix and it was SO good. It’s so quick and easy to make and it is all natural fruit so you don’t have to worry about those “artificial” fruit juice sweeteners or anything you find in common juice boxes. Hey everyone! Since the semester is quickly coming to an end this is going to be my last post! I hope you all enjoyed my blog over this past semester and tried some of the meals I talked about!
This last post is going to be something I tried for the first time last week as a part of our group video project in this class. Today I will tell you all how to make 2 minute french toast using just a microwave! YES you read that correctly! I couldn’t believe it either until I tried it myself! It’s quick and easy and tastes really good!!
- 1 egg
- 1-2 slices of bread
- 3 table spoons of milk
- 2 mugs
- cinnamon (optional)
There are a few simple steps to prepare this quick meal.
Step 1: In one mug just take a spoonful of butter and melt it in the microwave for about 15 seconds.
Step 2: Then slice the bread into little cubes like this:
Step 3: Put the cubed bread pieces into the mug with the melted butter. You can gently push down on the bread but don’t smash it all into the bottom. You want the butter to soak through the bread.
Step 4: In a separate mug, crack the egg and add the 3 tablespoons of milk into the mug. Then you can add a pinch of cinnamon if you want.
Step 5: Next you are going to pour the liquid mixture from the second mug into the first mug on top of the bread pieces.
Step 6: Now put the mug into the microwave for about 1 minute and 20-30 seconds so the eggs are cooked and are not runny. You can cook it more or less depending on your personal preference.
Step 7: Now all you need to do is pour syrup on top of the bread pieces and it will look like this!!
That’s it! I told you it was simple and very quick to make! I was skeptical at first but once I made it, it tasted just like french toast! I added more syrup as I ate more because there wasn’t enough for the bottom pieces of bread. I shared this with my roommates who all equally loved it! I would definitely recommend this recipe for anyone looking to make a tasty quick breakfast when you are in a rush!

Hey everyone! This week I was craving something cheesy and I also wanted something with protein as well! For all you vegetarians out there this is perfect! I want to show you how I make my bean quesadillas! I love all types of quesadillas ranging from cheese to chicken to beans but this bean quesadilla is one of my favorite things to make when I’m craving cheese. It also isn’t too unhealthy for you which is always a plus! Just make sure to use whole wheat tortillas and low-fat cheese when making these if you want to take the healthier route.
Ingredients/ Materials Needed
- Whole wheat tortillas
- low fat mixed cheese pack
- refried beans ( 1 can)
- hot sauce
- pepperjack cheese blocks
- crushed red peppers
- can opener
- frying pan
This is a very simple and quick meal to make! When I say quick I mean under 10 minutes which is perfect for any typical college student in a rush to eat and get to class! First, all you need to do is use a can opener and open the can of refried beans. They look like this:
After that just put however much you want in a bowl and microwave it for about 1 minute. After the beans are heated just grab a knife or spoon and spread it on top of one half of your whole wheat tortilla. I usually make half of one tortilla and fold it over but you can use 2 tortillas and lay them on top of each other if you want! After spreading the beans on the tortilla, I add the mixed cheese on top of the beans and spread it all over! After that I add pepperjack cheese blocks if I want it to be a little more spicy! (it’s completely optional) I then sprinkle crushed red peppers on top and add some hot sauce on top of everything. Now you are ready to cook your quesadillas!
* Just a tip for the refried beans- If you are cooking the quesdilla just for one person then you do not need to use the whole can of beans. I would recommend only a few spoons worth of it. If you have leftover beans you can always put foil on top and refrigerate for a maximum of one week.
All you have to do now is get a frying pan and turn on the stove! Let the pan heat up a little bit before putting your quesdilla on the pan. Once its warmed up, just place the quesadilla on the pan. Let one side cook for about 3-4 minutes or until it golden brown. Then flip it over onto the other side to cook! And that’s it. Once both sides are golden it is ready to eat! I told you it was super fast and simple! I personally love making it a tad more spicy so I grab more hot sauce and use it as a side and dip my quesdilla into it but that is only if you like hot and spicy things! Hey everyone! I hope your week has treated you wonderfully! Today I am going to talk about a special sauce I made while experimenting for dinner one day. Do you love pasta as much as I do? I swear I was an Italian in a past life. I love love love creamy rich sauces with my pasta. As a college student I feel like we are pretty limited in what we eat and for all of you on a budget like I am this is a great tasting sauce that will fall under your college budget, I promise!
Lucky for you, you can make a lot of this sauce and just refrigerate or freeze any leftovers in order to have some ready made later on. *Just remember that when refrigerating the sauce, it will only be good for about a week. If you do not think you’re going to eat it within the week please do not forget to freeze the sauce! Once it is in the freezer it will be good to eat whenever you would like! What’s better than not having to worry about cooking and just warming something up, especially on those lazy days!
Materials You Will Need
- red sauce
- alfredo sauce (white)
- pepperjack cheese blocks (sliced and cut)
- crushed red peppers
- a pot
- a wooden spoon
All of these materials are probably all common things you already have in your household. I personally have used the following for sauces:
You can get these sauces from any local supermarket such as walmart or shoprite. It really doesn’t matter what kind of sauce or brand you get as long as its red sauce and alfredo sauce.
I would recommend either making the pasta ahead of time or while making the sauce. It is a lot easier to just add the sauce into the prepared pasta for your specific plate. I never mix the sauce directly into the entire pasta because sometimes you run out of sauce or pasta and it is much easier to just make those items separately and add accordingly to your dish. This sauce is very simple and easy to make. You pretty much are just mixing things together and you will taste something you never experienced before. I usually cook my pasta while making the sauce on the side.
First cook the pasta as the box states to do. After you add the pasta into the boiling water is the perfect time to make your sauce. Just get a pot and put it on the stove and turn the fire on medium-low heat. Once it becomes hot, add the red sauce into the pot. I typically add more Alfredo sauce than red so it becomes more of an orange colored sauce. I add the Alfredo sauce in and then mix the two sauces together. Once the sauces begin to boil, I add some salt and pepper. Next I add the blocks of pepperjack cheese. You can add as much as you want depending on how spicy you want your sauce to be. Then I add the crushed red peppers into the sauce and I mix everything together really well. After about 5 minutes your sauce is ready to be added to your pasta! The cooking time is honestly less than about 7 minutes and is super easy to make. I hope you enjoy this recipe and let me know if you ever try it!
